Oven-Grilled Vegetables

This dish is a mixture of vegetables that is cooked with vinegar and herbs to create and great side dish to be served with meat and chicken.

Time of preparation: 15 minutes
Time of cooking: 35 minutes
Serving: 6

Ingredients
1 carrot, medium size, diagonally sliced
2 zucchini, medium size, diagonally sliced
2 tomatoes, medium size, sliced
1 green pepper, medium size, sliced
1 red pepper, medium size, sliced
1 onion, large size, sliced
1 tsp garlic, crushed
1/2 cup black olives
1 tbsp parsley, chopped
1 tsp oregano, or thyme, dried
tsp mint, dried and crushed
1 tbsp vinegar
4 tbsp vegetable oil, preferably olive oil
Salt and pepper

Directions
– In a bowl, mix oil with garlic, parsley, dill, oregano, mint, vinegar, salt and pepper very well until all ingredients combine well.

– In a large baking pan, put all vegetable slices. Pour prepared dressing over vegetables and mix to coat vegetables well.

– Heat oven to 200 C. Put pan in oven for 30-35 minutes until vegetables are done turning vegetables on both sides occasionally. If vegetables become very dry, add a little more oil.

Note: You can add or eliminate any kind of vegetable that you like.
